Jack’s 🍲 “disco goop” recipe
This recipe will be written based on a 4 Liter InstantPot( ~12 cups/6 quarts).
Quantities of ingredients are approximated, please adjust to personal preferences on viscosity and taste of the stew.
Prep time: 5 - 20 mins. Cook time: 20-40 min(incl. time to pressurize, see notes section). Serves 6-10.

Getting Started
- Wash & Cut vegetable and or tofu/meat to preferred size/shape
- Wash barley and or other grains if preferred
- Fill pot with water
- Barley in pot first (If meat is used, put in the meat at this step)
- Input vegetables
- Input tofu and seasoning
- Grains in last
- Additional water/ingredients if preferred or additional space available
- Cap pressure cooker & ensure seal is secure
- Set on high-pressure manual at 1 - 5 minutes(If meat is used, cook time will need to double to 10-20 mins)
- Release pressure from cooker, stir well & profit!😋
Notes
All items of preference should be items that are suitable to be cooked in stews (which is actually most things). I’ve yet to test anything crazy that wouldn’t go well in the stew.
Cook time with meat included as ingredient will depend on the quantity/size of meat, usually anywhere from 10-30 mins would be sufficient.
Process is the same over conventional cooking methods(fire/electric stove) but will take longer vs. pressure cooker, be mindful of temperature and time when using these methods as different appliances will vary in heat levels.
To simplify ingredient procurement, I typically get frozen vegetables(carrot/corn/green bean mix) + fresh vegetables of preference, quinoa, oats, tree nut mix(unsalted) all from Costco. It costs about 20 bucks for the vegetables and 30ish for the grain, per occurrence. The fresh vegetable will typically last 2 pots and the grains will last about 8 - 12 pots.

Advanced Techniques
To reduce prep time and cook time, once all ingredients are ready, pressure cooker could begin cooking as soon as there is water and some ingredients in the pot. Finish assembly of ingredients within 15 mins of setting device to cook, seal, finish, and enjoy!
